Is there a way to update multiple skus at a time, or do we have to go into each product to make updates?

Within Commerce7, you have to update SKUs individually; However, we have integrations with Zapier where you can update multiple SKUs within a spreadsheet and those will automatically update in Commerce7. Search for Zapier in Apps & Extensions.
