Can I launch my POS & Club before my website?


We strongly advise against this.

There is a possibility of higher-than-normal decline rate during your first Club run on Commerce7 - especially when you've had a change in payment processors. This is normal. But if your website isn't live yet, Customers would not be able to auto update their card info. And this creates a big customer support headache for you, the winery. 
Your transaction emails are meant to work with a live website so your Customers get the full experience with your brand.
Most of the transaction emails in Commerce7 include convenient links back to the Customer's profile on the website so they can view orders, update cards, customize Club shipments etc.  If your website isn't live, these links will break, causing a frustrating Customer experience.
